Roasted Beets & Cauliflower

Ingredients:

  • Cauliflower (I used yellow)
  • Beet
  • Drizzle of olive oil
  • Spices of choice (I used pinch of Rosemary for beets and Italian, garlic & paprika for cauliflower)

How to make it:

  • Heat oven to 425
  • Slice up Cauliflower and beets thinly
  • Spice with desired spices and drizzle with olive oil
  • Roast 45minutes or so turning halfway till beets are soft and cauliflower is crispy
  • Season with salt and pepper
