Vibrant Quinoa Salad

This Salad is delicious and well worth it! Recipe inspired from fit foodie finds with a few modifications 🙂

Ingredients for the salad:

  • 2 Cups uncooked Quinoa
  • 1 15.5oz black beans
  • 1 15.5 oz white beans like great northern beans
  • 2 cups of frozen corn
  • 2-3 cups of sliced cherry tomatoes
  • 1/2 red onion finely diced
  • large handful of cilantro (half a cup or so)

Ingredients for the dressing:

  • 2/3 Cup Olive Oil
  • 2 tsp Apple Cider Vinegar
  • 1 Tbsp Lemon Juice
  • 2 Limes Juiced
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/4 tsp paprika
  • 2 Tbsp Agave or honey
  • Salt & Pepper

Instructions:

  • Boil 4 cups of water with Quinoa and cook for about 20 minutes till water has absorbed.
  • Slice Cherry tomatoes in half, finely chop onion, and chop up cilantro
  • Microwave corn or cook over stove top till warm
  • When Quinoa has finished cooking add in both cans of beans, corn, tomatoes, cilantro & diced onion
  • Combine in a separate bowl ingredients for dressing and then mix in dressing! 🙂
  • Place in fridge so it can be served cold.
