These are very easy to make with a food processor and taste really good. Even people who love meat have said that they were great! 🙂 Definitely worth giving this recipe a try! This is the same recipe as vegan burgers but instead of black beans use kidney beans and roll into balls instead of patties. I also used in this one mixed pulp with beets as well as just carrots to make it more “meaty”
Ingredients:
- 2 cups of mixed carrot & beet juice pulp
- Handful of mushrooms
- 1/2 onion (white or yellow)
- 1 can kidney beans (I used 15.5oz)
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp coriander
- 1/2 tsp paprika
- 1/2 cup raw cashews
- Few Tbsp Olive oil
Instructions:
- Preheat cast iron skillet to medium high heat while you dice up mushrooms & onion
- Sauté in olive oil for 5 minutes till caramelized then add beans, pulp & Spices
- Continue to cook another 5 minutes
- Put cashews in food processor & pulse till finely chopped
- Add “burger” mixture into food processor with nuts & mix till combined
- Roll into “meatballs”
- Drizzle few Tbsp olive oil in cast iron skillet and turn on to medium heat. Wait few minutes till heated.
- Place “Meatballs” in skillet & sprinkle with salt.
- Cook on medium heat for about 6 minutes till crispy (turn every couple minutes or so while cooking.)
