Creamy Cauliflower Alfredo

Ingredients:

  • 1 Head of Cauliflower chopped into florets
  • 1 Head of Broccoli chopped into florets
  • Few Zucchinis or pasta noodles
  • 3/4 cup of raw cashews
  • Few Tbsp vegan butter
  • 1 Tbsp olive oil
  • Few cloves of garlic
  • 2 Tbsp nutritional yeast
  • 1 tsp onion powder
  • 1/2 tsp salt
  • Pinch of pepper
  • Juice from 1 lemon
  • 1 1/2 cups of veggie broth
  • Cup of oat milk or other non dairy milk
  • (Fresh parsley, red pepper flakes & vegan parm for serving)
  • Heat olive oil & vegan butter in large pot, add in minced garlic.
  • Saute for few minutes
  • Add all other ingredients to pot (except broccoli & pasta)
  • Bring to boil then cover, turn down heat & cook for 15 minutes till cauliflower is soft.
  • Meanwhile cook noodles of choice or spiralize zuchini & saute in tbsp of olive oil for few minutes
  • Steam broccoli
  • Pour alfredo mixture into high speed blender, blend till smooth
  • Serve over zuchini noodles or pasta noodles with broccoli
  • You can sprinkle with parsley, red pepper flakes & vegan parm
