Ingredients:
- 1 Head of Cauliflower chopped into florets
- 1 Head of Broccoli chopped into florets
- Few Zucchinis or pasta noodles
- 3/4 cup of raw cashews
- Few Tbsp vegan butter
- 1 Tbsp olive oil
- Few cloves of garlic
- 2 Tbsp nutritional yeast
- 1 tsp onion powder
- 1/2 tsp salt
- Pinch of pepper
- Juice from 1 lemon
- 1 1/2 cups of veggie broth
- Cup of oat milk or other non dairy milk
- (Fresh parsley, red pepper flakes & vegan parm for serving)
- Heat olive oil & vegan butter in large pot, add in minced garlic.
- Saute for few minutes
- Add all other ingredients to pot (except broccoli & pasta)
- Bring to boil then cover, turn down heat & cook for 15 minutes till cauliflower is soft.
- Meanwhile cook noodles of choice or spiralize zuchini & saute in tbsp of olive oil for few minutes
- Steam broccoli
- Pour alfredo mixture into high speed blender, blend till smooth
- Serve over zuchini noodles or pasta noodles with broccoli
- You can sprinkle with parsley, red pepper flakes & vegan parm
