These are so good and free from gluten, dairy, and vegan if you opt for agave. The chia gives them a crunch and the dates make them chewy for the healthy treat! They are also loaded with protein from the peanut butter and have fiber from the chia!
Bars
- 1 cup melted peanut butter
- 2 Tbsp chia seeds
- 1 tbsp coffee (optional but so good)
- 1/4 cup honey or agave
- 1 tsp vanilla
- 1/2 cup chopped pitted dates
- 1/2 cup coconut flour
Chocolate topping
- 1 bar dark chocolate
- 1-2 Tbsp coconut oil
- Dash of sea salt
Mix together bar ingredients and place on waxed paper in small dish to place into freezer for a few minutes while you prep the topping.
Melt the chocolate and the coconut oil and pour on top. I sprinkled with chia and sea salt
Freeze for an hour or two till firm and slice into bars.
Yum keep in fridge or freezer for whenever you want a protein or energy lift!
