- 10 slices bacon
- Few Tbsp butter
- Few cloves garlic
- 1 diced yellow onion
- 2 carrots chopped
- 2 celery stalks chopped
- 1/3 cup flour
- Few bouillon cubes or few cups broth
- 2 cups milk
- 1 cup cream (half & half)
- 5 peeled yellow potatoes chopped into cm pieces
- 1/4 tsp chili powder
- 1/4 tsp pepper
- chives or green onion
- cheddar cheese
- Chop Bacon into small pieces and cook in pot. Take bacon out; put aside. Add butter, garlic, onion, carrots and celery to the pot & sauté about 5-10 minutes.
- Add flour & stir. If making broth, heat few cups of water with few bouillon cubes. I used beef bouillon.
- Add broth, milk, cream, chopped potatoes, pepper, chili powder, and boil for about 10 minutes. Take half of soup out and blend it and add back to pot. This thickens it to make it delicious.
- Simmer for another few minutes till potatoes are soft.
- Serve topped with chopped scallions or chives, cheddar cheese & bacon! Goes well with biscuits or fresh bread too!
