This Delicious Soup is easily vegan and is so tasty!
- 1/2 cup Wild Rice
- 1/4 cup White Rice
- 3-4 cups Mushrooms
- Few Carrots
- Few Stalks Celery
- 1 Onion
- 4 cups veggie/beef broth
- 2 tsp dried parsley
- 1/2 tsp dried thyme
- Few leaves fresh basil and fresh parsley
- Few tbsp olive oil
- Tbsp minced garlic
- 1 can full fat coconut milk 13.5oz
Instructions:
- Soak rice for about 15 minutes. Meanwhile chop carrots, celery, onions and mushrooms.
- Sauté them in a large pot with olive oil and garlic for about 15 minutes. Add dried parsley, thyme, broth, coconut milk and rice.
- Bring to boil and simmer for about 35 minutes till rice is cooked through.
- Scoop out half of soup and use immersion blender or blend half then return to pot. Serve with warm bread!
