Wild Rice Mushroom Soup

This Delicious Soup is easily vegan and is so tasty!

  • 1/2 cup Wild Rice
  • 1/4 cup White Rice
  • 3-4 cups Mushrooms
  • Few Carrots
  • Few Stalks Celery
  • 1 Onion
  • 4 cups veggie/beef broth
  • 2 tsp dried parsley
  • 1/2 tsp dried thyme
  • Few leaves fresh basil and fresh parsley
  • Few tbsp olive oil
  • Tbsp minced garlic
  • 1 can full fat coconut milk 13.5oz

Instructions:

  1. Soak rice for about 15 minutes. Meanwhile chop carrots, celery, onions and mushrooms.
  2. Sauté them in a large pot with olive oil and garlic for about 15 minutes. Add dried parsley, thyme, broth, coconut milk and rice.
  3. Bring to boil and simmer for about 35 minutes till rice is cooked through.
  4. Scoop out half of soup and use immersion blender or blend half then return to pot. Serve with warm bread!
