Easy Tomato Bisque 🍅 🍲

Ingredients
• 2 tbsp butter or olive oil
• 1 medium onion, diced
• 2 garlic cloves, minced
• 2 cans (28 oz each) whole peeled
tomatoes
• 1 cup vegetable or chicken broth
• heavy cream or half-and-half
• 1 tsp sugar
• 1 tsp dried basil (or 1 tbsp fresh,
chopped)
• Salt and pepper, to taste

Instructions

  1. Sauté Aromatics:
    Heat butter or oil in a large pot
    over medium heat. Add diced
    onion and cook until softened
    (about 5 minutes). Stir in minced
    garlic and cook for
    minute.
  2. Add Tomatoes and Broth:
    Pour in the canned tomatoes
    (with juice) and broth. Break up
    the tomatoes slightly with a
    spoon. Add basil, salt, and
    pepper. Bring to a boil, then
    reduce heat to simmer for 20
    minutes.
  3. Blend the Soup:
    Use an immersion blender to
    puree the soup until smooth.
    Alternatively, blend in blender.
  4. Add Cream:
    Stir in the heavy cream and
    sugar if needed. Let it simmer
    for another 5 minutes. Adjust
    seasoning to taste.
