White Bean Chicken Chili

1 medium yellow onion, diced
Mushrooms chopped
2 cloves garlic, minced
1 can coconut milk full fat
1 cup chicken broth
7oz can diced green chiles
1 can corn
1 can cannellin beans
1 can great Northern beans
1 tsp chili powder
1/2 heaping teaspoon: oregano, paprika, coriander, cumin
1 cooked shredded chicken breast
1 tablespoon fresh cilantro

Instructions

  1. Saute onions in tbsp olive oil, then add garlic and mushrooms. Cook another few min.
  2. Add chicken broth green chiles, coconut milk, corn and beans.
  3. Add seasoning cumin, chili powder, oregano, paprika, coriander, dash black pepper.
  4. Cook 15 min then hit it quick w immersion blender (be sure not to blend it all just a few seconds)
  5. Add shredded chicken. For a creamier soup add some cream cheese.
  6. Top w cilantro sour cream cheese avocado chips or jalepenos.
