
Tuscan Butter Beans
This creamy delish recipe comes together in about 15 min! Can easily be made Dairy free too. Just substitute coconut full fat milk for heavy cream, butter alternative and omit the cheese!
Bag of fresh spinach
Diced onion
Few cloves minced garlic
Few tbsp butter
Can of butter beans
1/2 cup sun dried tomatoes
1/2 tsp paprika
1 tsp oregano
1/4 tsp black pepper
1/2 cup chicken broth
1/2 cup white wine
3/4 cup heavy cream
1/2 cup Parm cheese
Red pepper flakes and salt to taste
Sauté onion with butter garlic and spices for a few min. Add bag of spinach cooking it down. Add broth, cream, butter beans, sun dried tomatoes, and cook a few min. Add white wine and parm cheese and red pepper flakes and salt to taste. Serve with pasta!
