- 1 LG floret chopped broccoli
- Bell pepper chopped
- 1 cup chopped pineapple
- 2 cups orange juice
- 1/3 cup sugar
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 Tbsp shredded ginger
- Few cloves garlic, minced
- 1/4 cup corn starch
- 1/2 cup water
- 1 tbsp orange zest
- Handful of chopped scallions
- 1.5 cups rice
- Cook rice
- Add the ginger, garlic & bell pepper to a large sauce pan and sauté it for a few minutes over medium high heat with dash of olive oil.
- Add chopped pineapple and cook for another few minutes.
- Meanwhile, steam broccoli for about 10 minutes.
- Mix juice, sugar, soy sauce, and vinegar in a bowl and add into pan with veggies as it continues to simmer.
- In small bowl heat water and add corn starch and mix together. Pour into pan and continue to mix while simmering for another few minutes. Add drained broccoli.
- Serve it over rice, top with scallions, orange zest and red pepper flakes.
I also added baked tofu but you definitely don’t need the tofu.
