1 medium yellow onion, diced
Mushrooms chopped
2 cloves garlic, minced
1 can coconut milk full fat
1 cup chicken broth
7oz can diced green chiles
1 can corn
1 can cannellin beans
1 can great Northern beans
1 tsp chili powder
1/2 heaping teaspoon: oregano, paprika, coriander, cumin
1 cooked shredded chicken breast
1 tablespoon fresh cilantro
Instructions
- Saute onions in tbsp olive oil, then add garlic and mushrooms. Cook another few min.
- Add chicken broth green chiles, coconut milk, corn and beans.
- Add seasoning cumin, chili powder, oregano, paprika, coriander, dash black pepper.
- Cook 15 min then hit it quick w immersion blender (be sure not to blend it all just a few seconds)
- Add shredded chicken. For a creamier soup add some cream cheese.
- Top w cilantro sour cream cheese avocado chips or jalepenos.
