This Salad is delicious and well worth it! Recipe inspired from fit foodie finds with a few modifications 🙂
Ingredients for the salad:
- 2 Cups uncooked Quinoa
- 1 15.5oz black beans
- 1 15.5 oz white beans like great northern beans
- 2 cups of frozen corn
- 2-3 cups of sliced cherry tomatoes
- 1/2 red onion finely diced
- large handful of cilantro (half a cup or so)
Ingredients for the dressing:
- 2/3 Cup Olive Oil
- 2 tsp Apple Cider Vinegar
- 1 Tbsp Lemon Juice
- 2 Limes Juiced
- 1/2 tsp Cumin
- 1/2 tsp Garlic Powder
- 1/2 tsp Chili Powder
- 1/4 tsp paprika
- 2 Tbsp Agave or honey
- Salt & Pepper
Instructions:
- Boil 4 cups of water with Quinoa and cook for about 20 minutes till water has absorbed.
- Slice Cherry tomatoes in half, finely chop onion, and chop up cilantro
- Microwave corn or cook over stove top till warm
- When Quinoa has finished cooking add in both cans of beans, corn, tomatoes, cilantro & diced onion
- Combine in a separate bowl ingredients for dressing and then mix in dressing! 🙂
- Place in fridge so it can be served cold.
