Vegan Mediterranean Bowls

This is a super quick healthy dinner that is vegan
Ingredients:
Handful of Spinach
Cuscus or quinoa
Halved kalamata olives
halved cherry tomatoes
Diced cucumber
Diced red onion
chickpeas
hummus
lemon(s)
Spices:
paprika cumin salt peper

1. Cook cuscus or quinoa and sprinkle chickpeas with cumin and paprika.
2. Mix onion, cucumber, tomatoes, olives, chickpeas with spinach and cuscus
3. Squeeze Lemon on top and drizzle with olive oil salt and pepper!
