Vegan Fajita Plate

Ingredients:

  • Half an onion
  • Half sliced red, orange and yellow bell pepper
  • mushrooms
  • cilantro
  • lime slices
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • olive oil to fry
  • salt and pepper to taste

Optional: can of black beans, few avocados and cuscus

Instructions: drizzle olive oil in pan and saute onion, peppers, mushrooms, top with cilantro. Add in the spices and squeeze with fresh lime. Salt and pepper to taste. For larger serving sizes I recommend just using the whole peppers and onion!

I added black beans heated on the stove, cuscus & avocado to complete the meal.
