Ingredients:
- 1 Zucchini
- 1 lemon
- 2 cloves of garlic
- Handful cherry tomatoes halved
- Handful fresh basil chopped
- 8oz ricotta or vegan ricotta
- 2 flatbreads
- Drizzle of honey
- Red pepper flakes (optional)
Instructions:
- Preheat oven to 450
- Slice zucchini and satue in olive oil till tender
- Mix tomatoes with splash of olive oil, chopped garlic, salt & pepper
- Zest the lemon
- Mix half the zest and squeeze half lemon into ricotta
- Spread ricotta on flatbreads
- Top with sauted zucchini and tomato mixture
- Bake 10-12 min
- Top with fresh Basil, red pepper flakes, lemon zest & drizzle with honey
- Serve with plate of olive oil with salt, pepper, italian herbs, and squirt of lemon juice
