Zucchini Tomato Flatbreads

Ingredients:

  • 1 Zucchini
  • 1 lemon
  • 2 cloves of garlic
  • Handful cherry tomatoes halved
  • Handful fresh basil chopped
  • 8oz ricotta or vegan ricotta
  • 2 flatbreads
  • Drizzle of honey
  • Red pepper flakes (optional)

Instructions:

  • Preheat oven to 450
  • Slice zucchini and satue in olive oil till tender
  • Mix tomatoes with splash of olive oil, chopped garlic, salt & pepper
  • Zest the lemon
  • Mix half the zest and squeeze half lemon into ricotta
  • Spread ricotta on flatbreads
  • Top with sauted zucchini and tomato mixture
  • Bake 10-12 min
  • Top with fresh Basil, red pepper flakes, lemon zest & drizzle with honey
  • Serve with plate of olive oil with salt, pepper, italian herbs, and squirt of lemon juice
