- Lettuce chunks
- Few tomatoes sliced
- Vegan Cheese
- Yellow Rice or regular rice
- Vegan Seitan Chorizo crumbles
- Limes
- Cilantro
- 1/2 onion
- Handful Mushrooms sliced
- Taco shells hard or soft or both
- Few Avocados
How to make it:
- Heat oven to 350 & heat taco shells for 5 minutes until warm
- Prepare Rice according to package
- Saute Chorizo. It should brown after a few minutes
- Saute onion & mushroom, season with garlic and salt and pepper. If you want it hotter you can add in a dash of chili powder
- Mash avocado and add in some diced tomatoes, lime juice, Salt & pepper, and garlic powder
- Slice tomatoes & chop some lettuce
- Serve with vegan cheese, vegan sour cream, lime juice & cilantro
