  • Lettuce chunks
  • Few tomatoes sliced
  • Vegan Cheese
  • Yellow Rice or regular rice
  • Vegan Seitan Chorizo crumbles
  • Limes
  • Cilantro
  • 1/2 onion
  • Handful Mushrooms sliced
  • Taco shells hard or soft or both
  • Few Avocados

How to make it:

  • Heat oven to 350 & heat taco shells for 5 minutes until warm
  • Prepare Rice according to package
  • Saute Chorizo. It should brown after a few minutes
  • Saute onion & mushroom, season with garlic and salt and pepper. If you want it hotter you can add in a dash of chili powder
  • Mash avocado and add in some diced tomatoes, lime juice, Salt & pepper, and garlic powder
  • Slice tomatoes & chop some lettuce
  • Serve with vegan cheese, vegan sour cream, lime juice & cilantro
