Winter Detox Soup

This soup is so good, easy, healthy, filling and detoxing with Kale and Parsley & Vegan! 🙂

Ingredients

  • 2 potatoes
  • 2 carrots
  • 2 celery sticks
  • 1 onion
  • few cloves of garlic
  • 4 cups of veggie broth
  • Sprig of rosemary
  • 1 tsp thyme
  • 1/4 cup nutritional yeast
  • Dash of red pepper flakes
  • Olive oil
  • 1 lemon
  • 1 lime
  • 2 cans of great northern beans or other white beans of choice
  • Few cups or a bunch of Kale
  • Chopped fresh parsley to put on top (or tbsp or two dried mixed in at the end)

Dice onion, carrots, potatoes, celery and saute them in olive oil and/or drizzle of veggie broth till soft maybe 15 minutes. Add in the garlic, diced rosemary sprig & dash of red pepper flakes and thyme

Add juice of 1/2 lime, lemon, 2 cups of veggie broth, & 2 can of beans.

Boil soup for a few minutes. Blend up about 2/3 of the soup in blender & add it back in with the rest of the soup. Add in 1-2 more cups of veggie broth, chopped up Kale and nutritional yeast.

Cook for a few minutes, add in parsley & season with salt to taste! 🙂
