Chicken Marinade Ingredients

  • Few Chicken Breasts diced
  • 1 cup plain yogurt
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon ginger freshly minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder

Marinate all above ingredients for about an hour in fridge. You will also need all below ingredients.

  • Few Tbsp of olive oil or butter
  • 1 Tbsp garlic minced
  • 1 large onion finely diced
  • 1 Red bell pepper diced
  • 8oz of mushrooms diced
  • 1 Tbsp ginger minced
  • 1 1/2 Tsp garam masala
  • 1 1/2 Tsp ground cumin
  • 1 Tsp turmeric powder
  • 1 Tsp ground coriander
  • 10oz tomato sauce
  • 14oz tomatoes crushed
  • 1/2 teaspoon chili powder
  • 1/2 cup of heavy cream
  • 1 cup half & half
  • Handful of Fresh diced cilantro

Instructions

  • Marinate chicken with marinade ingredients.
  • Heat few Tbsp olive oil & Saute chicken for few minutes each side on medium high heat and remove from pan.
  • Heat 2 Tbsp olive oil or butter and saute with garlic, onion, red bell pepper and mushrooms for few minutes
  • Add rest of ingredients except cilantro, bring to boil and simmer for 10 minutes
  • Add cooked chicken mixture and simmer another few minutes
  • Top with fresh cilantro and serve with rice! YUMMM
  • If you have extras you can also freeze it to have for the next week!
