Green Bean Bake (Vegan option)

This is a simple and easy green bean dish that you can have vegan or regular. You can also omit the canned green beans & use more fresh ones.

Ingredients:

  • 1 lb fresh green beans
  • 1 can green beans (around 15oz)
  • 1 can cream of mushroom (vegan or regular)
  • 1 cup of coconut full fat milk
  • 1 can mushroom (around 15oz)
  • 1 cup cheese optional (vegan or regular cheddar)
  • 1/2 Tbsp Worcestershire sauce
  • Dash pepper and pinch of salt

Instructions:

  • Preheat oven to 350
  • Boil fresh green beans for about 10 minutes in salted water
  • Meanwhile, combine in baking dish mushrooms, cream of mushroom, Worcestershire sauce, pinch of salt and pepper, and coconut milk
  • Add in canned green beans and cooked green beans and mix together to evenly coat
  • Top with cheese or vegan cheese (optional since it still tastes great without it)
  • Bake for about 20 minutes and serve hot
