Ingredients:
- 1lb lean ground beef
- 2 tomatoes diced
- Red or Green enchilada sauce
- Tortillas of choice
- 3 cups cheddar cheese
- 1 onion diced
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chili powder
- pinch of salt
- Handful of chopped fresh cilantro
Instructions:
- Heat oil, saute onion with garlic for a few minutes
- Add in ground beef, paprika, cumin, chili powder and pinch of salt and cook till browned
- Add in diced tomatoes after the beef is cook, cook for a few more minutes till they are tender
- Prepare enchiladas by placing a large scoop of the mixture into each tortilla along with 1.5 cups of cheese into the enchiladas.
- Roll tortillas and place in pan. Top with other 1.5 cups of cheddar cheese
- Bake 375 25 min
- Top with enchilada sauce and cook another 5 minutes till sauce is warm
- Garnish with fresh cilantro
