Beefy Enchiladas

Ingredients:

  • 1lb lean ground beef
  • 2 tomatoes diced
  • Red or Green enchilada sauce
  • Tortillas of choice
  • 3 cups cheddar cheese
  • 1 onion diced
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • pinch of salt
  • Handful of chopped fresh cilantro

Instructions:

  • Heat oil, saute onion with garlic for a few minutes
  • Add in ground beef, paprika, cumin, chili powder and pinch of salt and cook till browned
  • Add in diced tomatoes after the beef is cook, cook for a few more minutes till they are tender
  • Prepare enchiladas by placing a large scoop of the mixture into each tortilla along with 1.5 cups of cheese into the enchiladas.
  • Roll tortillas and place in pan. Top with other 1.5 cups of cheddar cheese
  • Bake 375 25 min
  • Top with enchilada sauce and cook another 5 minutes till sauce is warm
  • Garnish with fresh cilantro

My husband who doesn’t like enchiladas likes these! WIN 🙂
