These are awesome healthy protein and vegan snacks. Perfect for on the go breakfast, snacks, a quick protein boost or a treat. The kids love these too! 🙂
Ingredients:
- 1.5 cups of oatmeal
- 1/2 cup peanut butter
- 1/4 cup chia seeds
- 2 Tbsp coconut oil
- 2-3 Tbsp coconut flour
- 2 Tbsp agave or (honey)
- 1 tsp vanilla extract
Melt the peanut butter and coconut oil for about 30 seconds in microwave
Mix in all other ingredients and roll into balls
You can put them in the freezer to harden up for a few hours 🙂 If they are too liquidy you can add more oats or coconut flour till they are able to be rolled.
