Ingredients:
- 2-3 large chicken breasts
- 1/2 cup flour
- Dash of pepper
- Dash of Parsley
- 2 beaten eggs
- Olive oil
- 1 cup parm cheese
- 2 cups mozzarella cheese
- 1 cup Italian bread crumbs
- 1 Jar pasta sause 24 oz
- Handful fresh Basil
Instructions:
- Heat oven to 425
- Prep 3 plates 1st flour with dash of pepper & parsley 2nd plate eggs 3rd plate breadcrumbs and 1/2 cup of parm cheese
- Slice chicken in half so it is thinner
- Preheat cast iron with few Tbsp olive oil to medium high heat
- Dip chicken in flour then egg then breadcrumbs
- Fry breaded chicken a few minutes each side till cooked
- Spray baking dish, pour half of red sauce on bottom, place cooked chicken & top with rest of red sauce, lots of parm & motz & fresh basil
- Cook for about 15 minutes & serve with bread, pasta, salad vino!
