Garlic & Wine Pasta with Pan Fried Tilapia

This is a healthier version of pasta with lots of mixed veggies. The white wine reduction and garlic gives it the perfect finish for a light refreshing meal! Here is what you will need along with any white wine of choice!

Ingredients

  • Fetuchini or pasta noodles of choice I used about half the box to serve 4 people
  • 1 Bell pepper
  • 1 Onion
  • Few Roma tomatoes
  • 1/2 cup white wine I used a white blend
  • Package of Asparagus
  • 1/2 Tbsp parsley flakes
  • 1 Tbsp minced garlic
  • 1 Tbsp cajun seasoning
  • 4 Tbsp butter
  • Tilapia fillets fresh
  • 1/2 cup half and half
  • 1 cup parm cheese
  • White white of choice 1/2 cup

Chop the garlic, onion, bell pepper, tomatoes and asparagus up and saute on medium/high with olive oil or butter for a few minutes.

Then add in the white wine, parsley flakes, 1/2 tbsp of cajun seasoning. You will use the other 1/2 for the fish. Let simmer for about 10 minutes till all the veggies are soft.

Meanwhile boil water and cook noodles.

Slice fish and heat another pan with some butter. Season fish with 1/2 tbsp of cajun seasoning.

Cook fish while the veggies are finishing for a few minutes on each side till cooked throughout.

Add in half and half, parm cheese to veggies and mix in the drained noodles so it is all in one pot. Serve topped with fresh parsley and parm cheese or red pepper flakes to give it more of a kick. Serve the fish on the side.

And of course this pairs well with the rest of the white wine you opened for a nice dinner! 🙂
