Teriyaki Salmon w/ Coconut Rice & Lemon Pepper Broccoli

Salmon

  • 1-2 lemons sliced
  • 1 large fresh salmon fillet
  • 1/4 cup soy sauce
  • 1/4 cup of maple syrup
  • 1 Tbsp minced garlic
  • salt & pepper

Broccoli

  • 2 cups broccoli florets
  • lemon pepper seasoning
  • 3 tbsp butter

Coconut Rice

  • 1 cup dried rice
  • 1.5 cups water
  • 1/2 cup coconut full fat milk (I used from a can)
  • 1 Tbsp sugar
  • dash salt
  • Heat oven to 425 and make teriyaki seasoning by mixing garlic, soy sauce & maple syrup together
  • Place salmon on baking sheet lined with foil and pour teriyaki seasoning over it. Salt and pepper & place sliced lemons.
  • Bake about 20 minutes till cooked through
  • Meanwhile boil 1.5 cups water with 1/2 cup coconut milk, 1 tbsp sugar, and dash of salt & rice. Bring to boil, & simmer for 23 to 25 minutes
  • Steam broccoli and seasoning with lemon pepper & butter
