Salmon
- 1-2 lemons sliced
- 1 large fresh salmon fillet
- 1/4 cup soy sauce
- 1/4 cup of maple syrup
- 1 Tbsp minced garlic
- salt & pepper
Broccoli
- 2 cups broccoli florets
- lemon pepper seasoning
- 3 tbsp butter
Coconut Rice
- 1 cup dried rice
- 1.5 cups water
- 1/2 cup coconut full fat milk (I used from a can)
- 1 Tbsp sugar
- dash salt
- Heat oven to 425 and make teriyaki seasoning by mixing garlic, soy sauce & maple syrup together
- Place salmon on baking sheet lined with foil and pour teriyaki seasoning over it. Salt and pepper & place sliced lemons.
- Bake about 20 minutes till cooked through
- Meanwhile boil 1.5 cups water with 1/2 cup coconut milk, 1 tbsp sugar, and dash of salt & rice. Bring to boil, & simmer for 23 to 25 minutes
- Steam broccoli and seasoning with lemon pepper & butter
