This is so delicious, healthy and plant based. The kids love it too, perfect for lunches!
Here is what you will need this will feed a few people double it for a larger family more than 3 or 4 people
- 1 can chickpeas drained
- 3 stalks celery
- 2 avocados
- 1/4 cup sun dried tomatoes or a tomato or 2 diced
- 1/2 lime juiced
- 1 tsp garlic
- 1 tsp lemon pepper seasoning
- 2 tsp parsley
- 1 tsp onion powder or 2 tbsps diced onion
- 3 tbsp olive oil
- Small handful of chopped cilantro if you want too
- Smash the chickpeas
- Chop celery and sun dried tomatoes
- Add all together with spices and add in avocados
- Add in 1-2 Tbsp olive oil till mixes well and serve as a sandwich or on crackers
