Vegan Chickpea Avocado Salad

This is so delicious, healthy and plant based. The kids love it too, perfect for lunches!

Here is what you will need this will feed a few people double it for a larger family more than 3 or 4 people

  • 1 can chickpeas drained
  • 3 stalks celery
  • 2 avocados
  • 1/4 cup sun dried tomatoes or a tomato or 2 diced
  • 1/2 lime juiced
  • 1 tsp garlic
  • 1 tsp lemon pepper seasoning
  • 2 tsp parsley
  • 1 tsp onion powder or 2 tbsps diced onion
  • 3 tbsp olive oil
  • Small handful of chopped cilantro if you want too
  • Smash the chickpeas
  • Chop celery and sun dried tomatoes
  • Add all together with spices and add in avocados
  • Add in 1-2 Tbsp olive oil till mixes well and serve as a sandwich or on crackers
