Thai Cauliflower Chickpea Curry Vegan

This is so good and even my friend who doesn’t like curry loved this.

Ingredients:

  • 1 head of chopped cauliflower
  • 1 diced onion
  • 1 can chickpeas
  • 8oz chopped mushrooms
  • 2 cans of full fat coconut milk
  • 1 lime juiced
  • large handful of basil 12 leaves chopped
  • 3 Tbsp honey or agave for vegan
  • 1 tbsp minced garlic
  • Few Tbsp olive oil
  • Dash of salt
  • Tbsp of red curry powder
  • 1/4 tsp turmeric

Heat cast iron to medium heat & add couple Tbsp olive oil, garlic & onion. Sauté for few minutes then add in chickpeas and cook for another 10 minutes. Add a handful of mushrooms and cook another few minutes.

Get some rice cooking. I do 2 cups of rice with 3 cups water & 1/2 can of coconut milk. Then I add 2 Tbsp of sugar so it is delicious coconut rice!

Meanwhile heat another pan with olive oil and sauté cauliflower for 10 to 15 min till crisped.

Combine all together and sprinkle on curry powder, turmeric and pour in coconut milk. I use a can and a half for the curry and the other half a can for the rice. Turn down heat to low and add honey, lime, salt and chopped basil. ? YUM
