Delicious Assortment of rainbow veggies seasoned and roasted to perfection!

Slice up some veggies you want to roast. I used squash, carrots, brussels, onion and a can of chickpeas. You can use whatever you want.

  • Roast for 30-40 minutes at 425 depending on how crispy you want them and flip halfway
  • I used olive oil and salt on everything
  • plus paprika on chickpeas
  • Italian, basil and garlic on squash
  • Parsley and garlic on carrots
  • Garlic and Italian on brussels
