Fresh Quinoa Ginger Salad
1 can black beans
1 can corn
2 cups cooked quinoa
1/2 cup sliced olives
2 sliced radishes
1/4 diced onion
1 cup halfed cherry tomatoes
Handful chopped parsley
Few cups mixed greens
For dressing combine
2 tsp of fresh grated ginger
1/3 cup of high quality olive oil
1/2 tsp salt (more or less to taste)
Dash of pepper
Combine dressing and pour over salad and mix
