Veggie Bell Pepper Curry

This is an easy curry to make and easily is made vegan.

Ingredients:

  • 2-3 diced bell peppers
  • 1 diced onion
  • 4oz chopped mushrooms
  • 1 can of full fat coconut milk
  • 1 lime juiced
  • Handful of basil chopped
  • 3 Tbsp honey or agave
  • 1 Tbsp minced garlic
  • Few Tbsp olive oil
  • Dash of salt
  • 1-2 Tbsp of red curry powder

Heat cast iron to medium heat & add couple tbsp olive oil, garlic & onion. Sauté for few minutes then add in diced bell peppers and cook for another 10 minutes. Add a handful of mushrooms and cook another few minutes or until tender.

Get some rice cooking.

Add 1 tbsp curry powder, pour in coconut milk, lime juice, honey or agave and salt to taste. If it needs more curry powder sometimes I use more. Simmer till heated and top with chopped basil. Serve with rice!
