Protein Quinoa Salad WFPB

  • 2 cups cooked quinoa
  • 1 can corn
  • 1 can black beans
  • 1 can northern beans
  • 1 can chickpeas
  • 1/4th chopped red onion
  • 1 cup chopped cherry tomatoes
  • Handful chopped parsley
  • Juice from half lemon
  • Cumin
  • Paprika
  1. Cook quinoa
  2. Mix in all other ingredients
  3. Squeeze lemon half and season with generous amount of salt and dash of cumin and paprika! (For WFPB omit the salt)
