This is delicious and healthy!
- 1 diced onion
- 3 chopped carrots
- 3 chopped celery stalks
- 1 diced potato
- 1 cup frozen peas
- 1 can full fat coconut milk
- 3 cups veggie or beef broth
- tsp of each: sage, thyme, oregano
- Sausage or cooked bacon optional
- 2 cans white beans
- Bunch of de-stemmed chopped kale
- Tbsp minced garlic
- 2 Tbsp olive oil
- Dash salt and pepper
- tsp apple cider vinegar (optional)
- Handful of fresh herbs like basil and parsley
- Sauté chopped onion, carrots, celery & potato in large pot with olive oil and garlic for about 10 minutes.
- Add sage, thyme, oregano, peas, broth, beans and coconut milk.
- Cook till veggies are soft. Scoop out half and blend it or use an emersion blender on half of the soup.
- If you are doing any add ins like sausage or cooked bacon you can add it in now.
- Add tsp apple cider vinegar if you want to give it more of a twang and kale, fresh herbs, and salt and pepper to taste. Simmer till kale is cooked.
- If it needs more liquid you can add more broth or milk of choice.
