White Bean Kale Soup

This is delicious and healthy!

  • 1 diced onion
  • 3 chopped carrots
  • 3 chopped celery stalks
  • 1 diced potato
  • 1 cup frozen peas
  • 1 can full fat coconut milk
  • 3 cups veggie or beef broth
  • tsp of each: sage, thyme, oregano
  • Sausage or cooked bacon optional
  • 2 cans white beans
  • Bunch of de-stemmed chopped kale
  • Tbsp minced garlic
  • 2 Tbsp olive oil
  • Dash salt and pepper
  • tsp apple cider vinegar (optional)
  • Handful of fresh herbs like basil and parsley
  1. Sauté chopped onion, carrots, celery & potato in large pot with olive oil and garlic for about 10 minutes.
  2. Add sage, thyme, oregano, peas, broth, beans and coconut milk.
  3. Cook till veggies are soft. Scoop out half and blend it or use an emersion blender on half of the soup.
  4. If you are doing any add ins like sausage or cooked bacon you can add it in now.
  5. Add tsp apple cider vinegar if you want to give it more of a twang and kale, fresh herbs, and salt and pepper to taste. Simmer till kale is cooked.
  6. If it needs more liquid you can add more broth or milk of choice.
