Broccoli Veggie Cheddar Soup

  • 2 chopped carrots
  • 1 chopped onion
  • 2 floretts chopped broccoli
  • 3 cloves minced garlic
  • 1 diced potato
  • 2-3 cups broth
  • 2 cups half and half or milk
  • 1/4 cup butter
  • 1/4 cup flour

  • 8 slices of bacon
  • dash red pepper flakes
  • dash paprika
  • dash nutmeg
  • dash thyme
  • dash pepper
  • dash salt
  • small dash of sage
  • Cheddar cheese
  1. Chop onion, and saute with butter and garlic for few minutes. Add in flour and whisk for minute or 2.
  2. Add in broth, cream or milk, chopped veggies spices and bring to a boil, then simmer for about 20 min till veggies are cooked through. (I also used a handful of cauliflower just cause I had it in the fridge but you don’t need to)
  3. Meanwhile chop bacon into small pieces and cook in another pan.
  4. Blend up soup most of the way with immersion blender and then add in bacon.
  5. At the end add in as much cheddar cheese as desired. Salt and pepper to taste. You can add more or less red pepper flakes depending on how spicy you like it.
  6. This goes great with my fast and easy bread
