Protein Blondies (Dairy Free & Gluten Free)

These are delicious and really easy to make.

  • 1 can chickpeas
  • ½ cup peanut butter
  • 1 Tbsp vanilla
  • 1/3 cup honey 
  • 1/3 cup sugar
  • ½ tsp salt
  • 1 Tbsp dairy free milk
  • pinch of baking soda
  • ½ tsp baking powder
  • 1 cup of chocolate chips
  • 1/2 cup coconut flakes
  1. Preheat oven to 350 and grease 8×8 pan. Rinse chickpeas and blend everything together in food processor except for the chocolate chips.
  2. Mix in by hand chocolate chips. Put batter in pan and sprinkle with rest of chips.
  3. Bake 20-25 min till turns brown around the edges. After it cools you can slice into bars and you can freeze leftovers. I actually put it into the freezer after it cooks for about an hour. This helps it set better and makes it easier to cut.
