Colorful Bean and Quinoa Salad WFPB

This delicious bean and quinoa salad is loaded with fiber, protein and nutrients and very filling without any guilt. There is no added oil or salt for a super healthy meal! 🙂

  • Few cups cooked Quinoa
  • Juice from 2 lemons
  • Can Corn
  • Can Black beans
  • Can kidney beans
  • Can garbanzo beans
  • Can Cannellie beans
  • Chopped Cilantro
  • Red bell pepper diced
  • Handful diced onion
  • Garlic powder
  • Minced Ginger 1 tbsp
  • Diced cherry tomatoes
  • Sun dried tomatoes
  1. Chop veggies and rinse out cans of beans.
  2. Combine all ingredients together and eat alone, as a dip or on top of a large green salad.
