This delicious bean and quinoa salad is loaded with fiber, protein and nutrients and very filling without any guilt. There is no added oil or salt for a super healthy meal! 🙂
- Few cups cooked Quinoa
- Juice from 2 lemons
- Can Corn
- Can Black beans
- Can kidney beans
- Can garbanzo beans
- Can Cannellie beans
- Chopped Cilantro
- Red bell pepper diced
- Handful diced onion
- Garlic powder
- Minced Ginger 1 tbsp
- Diced cherry tomatoes
- Sun dried tomatoes
- Chop veggies and rinse out cans of beans.
- Combine all ingredients together and eat alone, as a dip or on top of a large green salad.
