This is a simple and delicious ceviche that feeds a family and doesn’t take long to make. Make sure you have fresh high quality fish like tilapia or salmon for this. (Recipe inspired from YumVix)

Ingredients:
- 4 filets of fish I used tilapia
- 1 small red onion sliced in strips
- Bunch of Cilantro diced up
- 1 cup of fresh lime juice or (3/4 cup lime & 1/4 lemon)
- Couple cloves of garlic
- 1in cube of ginger
- 1/2 stalk celery
- Salt & Pepper
Instructions
- Cube fish, place in bowl, season generously with salt & pepper
- Dice cilantro & onion and add to fish
- Place celery, garlic and 1/4 cup water in food processor, mix and combine with fish
- Add lime juice
- Stir till well combined
- Let sit 20 to 30 minutes & serve cold. Pairs well with mango salad recipe and chips
