Ingredients:
- 1 cup dry quinoa
- Can of enchiladas sauce
- Can of green chilies
- Cup of corn
- Can of black beans
- Cilantro
- 1 chopped tomato
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Vegan cheese
- Heat oven to 375
- Cook quinoa
- Combine enchilada sauce, green chilies, corn and beans
- Mix in cumin, chili powder & cilantro
- Add cooked quinoa & top with vegan cheese, tomato, green onions
- Back 15 min
