- 2 cups cooked quinoa
- 1 can corn
- 1 can black beans
- 1 can northern beans
- 1 can chickpeas
- 1/4th chopped red onion
- 1 cup chopped cherry tomatoes
- Handful chopped parsley
- Juice from half lemon
- Cumin
- Paprika
- Cook quinoa
- Mix in all other ingredients
- Squeeze lemon half and season with generous amount of salt and dash of cumin and paprika! (For WFPB omit the salt)
