Pumpkin Fiber Muffins

Ingredients

  • 1 cup pumkin puree
  • ½ cup brown sugar 
  • ¾ cup almond milk 
  • 1tsp vanilla extract 
  • ½ tsp baking powder 
  • 1 tsp cinnamon 
  • 3 tbps coconut oil 
  • 1 cup coconut flour 
  • 2 cup bran flakes 
  • Dash of salt 
  • Few tbsp vegan chocolate chips or chunks. I used chips in this one but I am excited to use these vegan chocolate chunks in another recipe.

Instructions

  • Heat oven to 375 
  • Mix wet ingredients and set aside 
  • Put bran flakes into food processor and mix till broken up to almost flour consistency 
  • Mix all dry ingredients then mix in wet 
  • Put into small muffins sheet 
  • Bake 25 min till done

This recipe had 40Grams of fiber in it.  That is the same amount as 10 small to medium sized apples.  Most people get half as much fiber as they need eat day. Fiber is super important in the diet to prevent cancer and keep you full longer.  2 of these bite size muffins is the same amount of fiber in 1 small apple! Enjoy : )
