Vegan Protein Bars

This is an easy do it yourself bar that comes out to be way cheaper than buying Lara Bars. If you don’t have a food processor they are very handy for making a variety of dressings, dips and things like these bars. I have been using a cusinart one for the last few years and love it.

  • 2 cups pitted dates
  • dash of salt
  • 1/2 tsp vanilla extract
  • 2 Tbps unsweetened cocoa powder
  • 1 cup of peanuts or Raw Cashews (Here are the cashews I get off amazon in bulk) Cashews are my favorite since it gives these bars a creamier taste
  • Blend nuts in in food processor till they become small chunks
  • Take them out and blend dates for a minute or so
  • Add in other ingredients and blend till mixed throughout.
  • Place on way paper and press together into a large square.
  • Freeze for an hour till firm. Then slice.
