What you need:
- 1 diced onion
- 1 cup of dry quinoa
- 3 multi colored bell peppers
- 2 cups of cheese (vegan or regular or omit if you wish)
- 1 cup of enchilada sauce
- 16oz sliced mushrooms
- 1 cup of corn
- 1 15oz can of black beans or other kind
- 1 cup of salsa
- Handful of fresh cilantro
- Few Tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp paprika
- Pinch of salt
- Few cloves minced garlic
- Juice from 1 lime
- Scallions for garnishing
How to make this:
- Preheat oven to 425
- Cook quinoa according to package
- Saute your chopped onion with tbsp olive oil and garlic for few minutes then add mushrooms, cilantro and continue to cook a few more minutes
- While that is cooking slice peppers in half and scoop out insides
- Drizzle olive oil on cookie sheet or pan and place peppers inside.
- Drizzle peppers with oil too and cook for 20 minutes, flip and cook another 10 minutes
- Add enchilada sauce, corn, beans, salsa, spices, juice from the lime then add in cooked quinoa and pinch of salt
- Stuff your peppers and cook for about 15 minutes! You can top with vegan cheese or regular cheese and scallions too
