Vegan Stuffed Peppers

What you need:

  • 1 diced onion
  • 1 cup of dry quinoa
  • 3 multi colored bell peppers
  • 2 cups of cheese (vegan or regular or omit if you wish)
  • 1 cup of enchilada sauce
  • 16oz sliced mushrooms
  • 1 cup of corn
  • 1 15oz can of black beans or other kind
  • 1 cup of salsa
  • Handful of fresh cilantro
  • Few Tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • Pinch of salt
  • Few cloves minced garlic
  • Juice from 1 lime
  • Scallions for garnishing

How to make this:

  • Preheat oven to 425
  • Cook quinoa according to package
  • Saute your chopped onion with tbsp olive oil and garlic for few minutes then add mushrooms, cilantro and continue to cook a few more minutes
  • While that is cooking slice peppers in half and scoop out insides
  • Drizzle olive oil on cookie sheet or pan and place peppers inside.
  • Drizzle peppers with oil too and cook for 20 minutes, flip and cook another 10 minutes
  • Add enchilada sauce, corn, beans, salsa, spices, juice from the lime then add in cooked quinoa and pinch of salt
  • Stuff your peppers and cook for about 15 minutes! You can top with vegan cheese or regular cheese and scallions too
