Sausage, Kale Veggie Soup

This is a delicious soup. To make this vegan simply omit the sausage.

Ingredients:

  • 2 potatoes
  • 1 sweet potato
  • 3 carrots
  • 3 celery sticks
  • 1 onion
  • Few cloves of garlic
  • 4 cups of veggie broth
  • Sprig of rosemary or (1/2 tbsp dried)
  • 1 tsp thyme
  • Chopped fresh parsley or 1 Tbsp dried parsley
  • 1/4 cup nutritional yeast
  • 1 Tbsp Olive oil
  • 1 can of great northern beans or other white beans of choice
  • 2 Sausage links
  • Bunch of Kale chopped and de-stemmed

How to Make it:

  • Chop potatoes, carrots, celery and onion
  • Heat Pot and saute them in minced garlic and olive oil for a few minutes.
  • Add in the, rosemary, thyme, and 2 cups broth and simmer for about 15 minutes till veggies are soft.
  • Add in can of beans and nutritional yeast
  • Blend up half of the soup in blender and pour back into pot. This is to make the soup thicker

Now add in Kale, chopped cooked sausage, 2 more cups veggie broth. I used couple links of this sausage which was already cooked to make it easier. Simmer till hot a few more minutes.

  • Top with parsley and serve with warm bread
