- 2 cans coconut milk full fat
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 3 tbsp red curry paste
- 2 tomatoes diced
- 1 onion diced
- 2 sweet potatoes and 1 regular potatoe peeled and diced
- 1 in fresh ginger shredded
- 1 cup dried red lentils
- 6 cups fresh spinach
- Juice from half lime
- 6 cloves Minced garlic
- 2 to 3 cups veggie broth
- 3 tbsp olive oil
- Rice
- Optional chopped peanuts, lime wedges, cilantro.
- Cook rice. Meanwhile sauté olive oil, garlic and onion for a few min in large pot.
- Add potatoes, tomatoes, ginger and cook for a few more min.
- Add rest of ingredients to pot except spinach (coconut milk, 2 cups veggie broth, lentils, soy sauce, curry paste, peanut butter, lime juice) and bring to boil.
- Reduce heat and simmer for half hour or till lentils and potatoes are soft. If needed Add more veggie broth depends how think you want it.
- Add spinach and serve w rice. You can top w crushed peanuts Cilantro Lime wedges etc.
