Protien Veggie Curry

  • 2 cans coconut milk full fat
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 3 tbsp red curry paste
  • 2 tomatoes diced
  • 1 onion diced
  • 2 sweet potatoes and 1 regular potatoe peeled and diced
  • 1 in fresh ginger shredded
  • 1 cup dried red lentils
  • 6 cups fresh spinach
  • Juice from half lime
  • 6 cloves Minced garlic
  • 2 to 3 cups veggie broth
  • 3 tbsp olive oil
  • Rice
  • Optional chopped peanuts, lime wedges, cilantro.
  1. Cook rice. Meanwhile sauté olive oil, garlic and onion for a few min in large pot.
  2. Add potatoes, tomatoes, ginger and cook for a few more min.
  3. Add rest of ingredients to pot except spinach (coconut milk, 2 cups veggie broth, lentils, soy sauce, curry paste, peanut butter, lime juice) and bring to boil.
  4. Reduce heat and simmer for half hour or till lentils and potatoes are soft. If needed Add more veggie broth depends how think you want it.
  5. Add spinach and serve w rice. You can top w crushed peanuts Cilantro Lime wedges etc.
